No Crust Quiche

I made this for a Mother's Day brunch and it was a hit!

No Crust Quiche

1/2 cup onions, chopped
1lb. mushrooms
8 eggs
4 cups chopped ham or chicken ( I used thinly sliced packaged ham)
4 T. butter
1/2 cup flour
2 cup sour cream
2 cup small curd cottage cheese
4 cup Monterey Jack Cheese
1 cup Parmesan cheese

Saute onions and mushrooms in butter. Mix all ingredients together and put in 2, 10-inch pie dishes. Bake 350 degrees for 40-45 minutes, or until knife stuck into center comes out clean. This is a quick and easy recipe.
