Flag Day Sugar Cookie in a Pan

Happy Flag Day!

Sugar Cookies in a Pan
1 C. butter, softened
1 (8 oz.) package cream cheese, softened
1 1/2 C. sugar
1 egg
1 tsp. almond extract
1/2 tsp. vanilla
1/2 tsp. baking powder
2 3/4 C. flour

Combine butter, cream cheese and sugar until smooth. Beat in egg, almond extract and vanilla. Add dry ingredients, mixing just until incorporated. With a floured knife, spread into a greased and floured 12X17 sheet pan. Bake at 375 degrees for 20 minutes. Cool and frost.

Cream Cheese Frosting
1/2 C. butter, softened
4 oz. cream cheese, softened
3 1/2 C. powdered sugar
2 tsp. vanilla
splash of milk

Blend butter and cream cheese well. Add powdered sugar and vanilla. Add milk to reach spreadable consistgency. Frost and decorate as desired. Cut and serve.

Tomato Tortellini Soup

And yet another post-baby meal....
this one's super easy, and kid friendly to boot!

Tomato Tortellini Soup

2 cans chicken broth
1 can tomato soup
1 9 oz package tortellini
1/2 of an 8 oz tub cream cheese with chive and onion

In a medium saucepan bring broth to a boil. Add tortellini; reduce heat. Simmer, uncovered, for 5 minutes. In a bowl whisk a 1/3 cup of the hot broth into the cream cheese spread until smooth. Return all to saucepan along with tomato soup; heat through. Sprinkle with chives before serving.

Makes 4 servings

Ham Stuffed Manicotti

Another meal from a fabulous neighbor. This one was delivered frozen so I could save it until needed. It's another family favorite!

Ham Stuffed Manicotti

•14 manicotti shells
•1 onion, chopped
•2 cloves minced garlic
•¼ cup butter
•3 cups cubed ham
•1/3 cup grated parmesan cheese
•6 Tbsp. butter
•6 Tbsp. flour
•3 cups milk
•½ tsp. pepper
•2 cups shredded Swiss cheese
•½ cup grated parmesan cheese

Cook manicotti as directed. (Half the time if freezing.) Drain and set aside. Sauté onion and garlic in butter. Add ham and cook for a few minutes. Set aside to cool slightly. Stir 1/3 cup parmesan cheese into ham mixture.
In a saucepan, melt 6 tablespoons butter. Stir in flour and heat until bubbly. Add milk and pepper. Whisk while cooking on medium to medium high heat until thickened. Stir in Swiss and remaining parmesan cheese. Mix ¼ of this cheese sauce with the ham mixture. Fill the manicotti shells with ham mixture. (A baby spoon works great to get the mixture into the shells without making such a mess.) If freezing, see directions below. Otherwise, spread half of the remaining cheese sauce in the bottom of a greased 9X13 pan. Place filled shells in pan and cover with remaining sauce. Bake at 350 degrees for 30 minutes.

Freezing directions: Spread half of the remaining cheese sauce in the bottom of a greased disposable pan. Place filled shells in pan and cover with remaining sauce. Cover and freeze.

Awesome Baked Ziti

My neighbor brought this over when I had my baby. It has become a family favorite!

Awesome Baked Ziti
1 lb. dry ziti pasta
1 onion, chopped
1 lb. lean ground beef
2 (26 oz) jars spaghetti sauce
6 oz. Provolone cheese, sliced
1 1/2 cup sour cream
6 oz. Mozzarella cheese, shredded
2 TB grated Parmesan cheese

Cook pasta until al dente, about 8 minutes; drain. In a large skillet, brown onion and ground beef over medium heat. Add spaghetti sauce and simmer 15 minutes. Preheat oven to 350 degrees. Butter a 9X13 dish. Layer as follows: 1/2 of the ziti, Provolone cheese, sour cream, 1/2 sauce mixture, remaining ziti, Mozzarella cheese, and remaining sauce mixture. Top with Parmesan and bake for 30 minutes.

Quick and Easy Recipes

These two recipes use canned chicken and are fabulous when you haven't thought of dinner and it is already 5:00p.m.

Poppy Seed Chicken

1 can of Cream of Chicken Soup
1 cup of sour cream
1 (12.5 oz) can of shredded chicken (prefer Kirkland brand)
1 cup of shredded cheese
sprinkles of poppyseed
ritz crackers crumbled

Serve over rice

Mix all ingredients together and pour into a square glass pan. Crumble ritz crackers on top.
Bake at 350 degrees for 30 minutes. Serve over rice.

Chicken Burritos

1 (12.5 oz) can chicken breast
1 can black beans, washed and drained
2/3 cup salsa
1 small can green enchilada sauce
1 tsp. oregano
1 tsp. cumin

6-8 flour tortillas cooked (I love the fresh tortillas from Costco or Walmart)
white rice
cheddar cheese
sour cream

Brown chicken and spices in large skillet. Add all other ingredients and simmer until thickened. Put scoop of rice in center of tortilla, add scoop of chicken mixture and desired toppings. We love this! It is great to reheat chicken mixture and make burritos for lunch the during the week as well.

favorite "go-to" chocolate cake

Jackson wanted a chocolate frog cake for his birthday this year. My frog design turned out mediocre, but the chocolate cake recipe was divine! Best chocolate cake I've ever made! It's super moist and delicious. Don't be alarmed when the batter seems too all works out in the end!

favorite "go-to" chocolate cake
2 C. four
1/2 cup cocoa powder
2 tsp. baking soda
1 tsp. salt

1/2 cup butter, softened
2 cups sugar
2 tsp. vanilla
2 cups boiling water
2 eggs

Sift together dry ingredients and set aside. Cream together butter, sugar and vanilla. Mix in boiling water, then add eggs and mix well. Gradually add dry ingredients and mix until well combined. Pour into greased 9X13 pan. Bake at 350 degrees for 25-30 minutes or until toothpick comes out clean. Frost cake while slightly warm with vanilla or chocolate buttercream frosting.

Buttercream frosting
1/2 cup butter, softened
3-4 cups powdered sugar, sifted
1/4 cup milk
2 tsp. vanilla

Cream butter in a mixer, then beat in 3 cups powdered sugar, milk, and vanilla. Continue adding powdered sugar until desired consistency is reached.
*to make chocolate frosting use above recipe but add 1/2 cup cocoa powder, sifted.

No Crust Quiche

I made this for a Mother's Day brunch and it was a hit!

No Crust Quiche

1/2 cup onions, chopped
1lb. mushrooms
8 eggs
4 cups chopped ham or chicken ( I used thinly sliced packaged ham)
4 T. butter
1/2 cup flour
2 cup sour cream
2 cup small curd cottage cheese
4 cup Monterey Jack Cheese
1 cup Parmesan cheese

Saute onions and mushrooms in butter. Mix all ingredients together and put in 2, 10-inch pie dishes. Bake 350 degrees for 40-45 minutes, or until knife stuck into center comes out clean. This is a quick and easy recipe.
